Ingredients:
- 1.5 lb boneless skinless thin cut chicken breast
- 1 cup corn
- 2 cup diced potatoes
- 2 tsp garlic powder
- 2 tsp paprika
- 2-3 tbsp olive oil
- 1/4 cup Rendezvous Bbq Sauce
- Handful shredded cheese
- 1/4-1/3 cup cooked bacon bits
- Salt, to taste
- Pepper, to taste
Instructions:
- Preheat the oven to 400 degrees.
- Add diced potatoes to a baking dish. Drizzle with 2-3 tbsp olive oil and season with garlic powder, paprika, salt, and pepper. Toss to combine. Place in the oven to bake for 15 minutes.
- After 15 minutes, remove from the oven and 1 cup of corn. Mix to combine. Top with chicken seasoned with salt and pepper.
- Brush bbq sauce on each piece of chicken, front and back. Place the baking dish back in the oven to bake for 30 minutes.
- Remove from the oven and top each piece of chicken with a handful of cooked bacon and top with shredded cheese. Drizzle with a little bbq sauce.
- Place back in the oven to bake for 5-7 minutes or until the cheese is melted.
- Serve warm and enjoy!
