Ingredients:
- 12 oz Applegate Sweet Italian Chicken Sausage, sliced
- 1 cup cauliflower
- 1 sweet potato, peeled and diced
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1-2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- Cooked rice or quinoa, for serving
White Bbq Sauce:
- 1 cup mayo
- 1/4 cup apple cider vinegar
- 2 tsp dijon mustard
- 1 tbsp Rendezvous Bbq Sauce
- 1/2 lemon, juiced
- 2 garlic cloves
- 1 tsp Rendezvous seasoning
- Salt, to taste
- Pepper, to taste
Instructions:
- Preheat the oven to 400 degrees.
- On a sheet pan, add sliced sausage, diced sweet potato, red onion, bell pepper, and cauliflower. Drizzle with olive oil and season with salt and pepper.
- Place the sheet pan in the oven to bake for 30 minutes.
- While the sheet pan ingredients bake, prepare your sauce. In a blender, add 1 cup mayo, 1/4 cup apple cider vinegar, 2 tsp Dijon mustard, 1 tbsp Rendezvous bbq sauce, lemon juice, 2 garlic cloves, 1 tsp Rendezvous seasoning, salt, and pepper. Blend until smooth and creamy.
- Once the sheet pan ingredients are finished baking, remove from the oven and assemble your bowl.
- Add cooked rice or quinoa to a bowl and topped with the roasted ingredients. Drizzle with your white bbq sauce and enjoy!
