Ingredients:
- 1 can black eyed peas, drained
- 1 can black beans, drained
- 2 ears corn, charred and cut off the cob
- 1 bell pepper, diced
- 1 tomato, diced
- 1/2 jalapeƱo, minced
- 2 green onions, chopped
- 2 tablespoons chopped cilantro
- 2 tablespoons Rendezvous sauce
- 1/4 cup avocado oil (or a neutral oil)
- 1 teaspoon apple cider vinegar
- Rendezvous seasoning
- Sea salt, to taste
Instructions:
- In a large bowl, add all beans, vegetables and cilantro.
- Meanwhile, in a small bowl, whisk Rendezvous sauce, avocado oil, apple cider vinegar, and Rendezvous seasoning.
- Pour over salsa and toss to coat.
- Taste and season with additional Rendezvous seasoning and sea salt based on your preference.
- Serve chilled or at room temperature with chips.
- Store in an airtight container for up to 5 days.
