Ingredients:
- 1 spaghetti squash
- 3-4 Applegate fire roasted red pepper chicken sausage links
- 2-3 tbsp Rendezvous seasoning
- 1-2 tbsp Rendezvous mild sauce
- 2 cups cauliflower
- 1 red bell pepper
- 1/2 cup corn
- 1 sweet potato
- 1/2 red onion
- 2-3 tbsp olive oil
- salt, to taste
- pepper, to taste
Instructions:
- Preheat the oven to 400 degrees.
- Poke holes down the center of the spaghetti squash with a knife and heat in the microwave for 7 minutes. After it is heated, cut the squash open and scoop out any excess seeds.
- Prepare the squash and cauliflower. Drizzle the spaghetti squash and cauliflower with olive oil and season with Rendezvous seasoning, salt, and pepper. Place the squash face down on a baking sheet and add the seasoned cauliflower. Bake in the oven for 20 minutes.
- On another baking sheet, add diced bell pepper, sweet potato, and red onion. drizzle olive oil and season with salt and pepper. toss to combine. Bake in the oven for 2o minutes.
- Prepare the Applegate sausage according to the package.
- Remove the baking sheets from the oven. Scrape the inside of the squash to make the spaghetti base. Place the spaghetti at the bottom of a bowl.
- Assemble the bowl with spaghetti squash topped with sausage, sweet potatoes, bell pepper, cauliflower, red onion, and corn (I used fresh corn cut off the cob but frozen or canned corn will work as well). Top with Rendezvous sauce and seasoning.
