Ingredients:
Serves 4
- 1 pound boneless/skinless chicken thighs, pounded
- 1 pound baby potatoes, halved
- 1 large zucchini, sliced
- 1 lemon, sliced
- 1 cup castelvetrano or kalamata olives, smashed
- 6 cloves garlic, smashed
- 1/4 cup olive oil
- Rendezvous Greek Seasoning
- Feta, crumbled, to garnish
- Fresh herbs (parsley or dill), to garnish
Instructions:
- Preheat oven to 400 degrees.
- Toss all ingredients in olive oil and arrange onto a baking sheet.
- Make sure to place some of the lemon slices on top of the chicken for extra flavor!
- Sprinkle generously with Rendezvous Greek Seasoning.
- Bake for 35 minutes.
- Then, turn the oven to broil and cook for about 5 more minutes (keeping a close eye not to burn it!).
- Sprinkle with extra seasoning, if needed, and crumbled feta and torn fresh herbs.
- Serve immediately.
