Ingredients:
- Rendezvous Marinade
- 1 block extra firm tofu, sliced into 1-inch strips
- Spring roll wrappers
- Vermicelli rice noodles
- 1 cucumber, peeled julienned
- 1 carrot, peeled and julienned
- Rendezvous Original Sauce
Instructions:
- Place tofu in a shallow dish.
- Pour about 1/2 cup Rendezvous marinade over the tofu and carefully turn the tofu to evenly coat.
- Marinate for at least 1 hour or overnight.
- Transfer half of the marinated tofu to an air fryer basket. Arrange tofu in an even layer.
- Cook on 400F for 8-10 minutes, flipping halfway.
- Continue with the remaining batch of tofu.
- Place vermicelli noodles in a pot or bowl of hot water to soften.
- Use the hot water to, one at a time, soften the spring roll wrapper and place on a clean surface.
- Add a handful of vermicelli noodles, carrots, and cucumber to the center of the wrapper, followed by 2 pieces of tofu.
- Carefully fold over the sides of the wrapper and roll tightly.
- Continue with remaining tofu and toppings.
- Serve dipped in Rendezvous Original Barbecue Sauce.
