The Hungry Hooker
Bbq Style Chicken and Rice Bake

Ingredients:

  • 1 lb boneless skinless chicken thighs
  • 1/2 red onion, diced
  • 1 sweet potato, peeled and diced
  • 1 red bell pepper, diced
  • Salt, to taste
  • Pepper, to taste
  • 2 tsp garlic powder
  • 1 tbsp Rendezvous seasoning
  • 1 tbsp olive oil
  • 1 cup basmati rice, measured uncooked
  • 2 cups bone broth
  • 1/3 cup shredded cheese
  • Rendezvous sauce, for serving

Instructions:

  1. Preheat the oven to 400 degrees.
  2. Season each side of the chicken thighs with salt, pepper and Rendezvous seasoning.
  3. Drizzle 1-2 tbsp olive oil in your pan or cast iron skillet and sear each side of the chicken for 2-3 minutes. Once charred and partially cooked, set the chicken aside.
  4. Add diced sweet potato, bell pepper, and onion to the pan. Season with salt, pepper, and garlic powder. Sauté for 2-3 minutes.
  5. Add 1 cup uncooked rice to the pan over medium heat and sauté for 1 minute.
  6. Pour in 2 cups of bone broth. Stir to combine.
  7. Add the chicken back to the pan and place the pan in the oven to bake for 30 minutes.
  8. Once the chicken has cooked, remove the pan from the oven and top with shredded cheese. Place the pan back in the oven just long enough to melt the cheese, about two minutes.
  9. Once the cheese is melted, serve warm with a drizzle of Rendezvous bbq sauce and enjoy!
