Ingredients:
- 1 lb boneless skinless chicken tenderloins, diced
- 1/4 cup Rendezvous bbq sauce
- 1 cup diced bibb or romaine lettuce
- 1/2 cup cherry tomatoes, diced
- 4 pieces of crispy bacon, crumbled
- 1/2 red onion, diced
- 2 hard boiled eggs, diced
- 1 avocado, diced
- 1/3 cup shredded cheddar cheese
- 1 tbsp olive oil
- 2 tsp garlic powder
- Salt, to taste
- Pepper, to taste
- Ranch dressing, for serving
- 1 tsp Rendezvous seasoning, for garnish
Instructions:
- Prepare the chicken. Dice chicken tenderloins into small bite size pieces and add to a bowl. Drizzle with olive oil and season with garlic powder, salt and pepper. Toss to combine.
- In a pan over medium-high heat, drizzle olive oil and add your seasoned chicken. Cook until golden and crispy (internal temperature should be 165 degrees).
- Add the cooked chicken to a bowl and drizzle with bbq sauce. Toss to combine.
- Assemble your salad. Add lettuce to a bowl and top with bbq chicken, diced tomatoes, cooked bacon, diced onion, diced egg, avocado, and cheese.
- Drizzle with ranch dressing and season with a little rendezvous seasoning.
- Serve immediately and enjoy!
