Ingredients:
- 2 lb bone-in chicken thighs
- 1/2 cup olive oil
- 2 (or more) lemons, juiced
- 5 garlic cloves, minced
- 3 russet potatoes, peeled and diced
- 3 tbsp Rendezvous Greek seasoning
Instructions:
- Prepare chicken. Pat chicken dry with a paper towel. Add thighs to a ziplock bag. Cover with olive oil, lemon juice, garlic, and Rendezvous Greek Seasoning. Close the ziplock bag and shake to coat and combine. Marinate for a minimum of 30 minutes (best marinated overnight).
- Preheat oven to 350 degrees.
- Add diced potatoes and marinated chicken to a large pan.
- Place in the oven to bake for 1-1.5 hours or until the internal temperature of the chicken is 165 and the tops are golden brown. The last 2-5 minutes, broil until brown and crispy.
- Serve warm and enjoy!
