Ingredients:
- 16 ounces of firm tofu, cubed into 1-inch pieces
- 1 cup Rendezvous Marinade
- 1 sweet potato, cubed into 1-inch pieces
- 1 red onion, cubed into 1-inch pieces
- Rendezvous Famous Seasoning
- 2 cups brown rice or quinoa, steamed
- Green onions, chopped to garnish
- Rendezvous Mild Sauce
Instructions:
- Carefully place cubed tofu in a bowl or Ziploc bag.
- Pour with Rendezvous marinade and gently toss or shake to coat.
- Cover or seal and refrigerate to marinate overnight or up to 12 hours.
- Shake your bag or flip over the (covered) bowl once or twice to evenly distribute the marinade.
- Preheat oven to 400F.
- Line a baking sheet with parchment paper.
- Place sweet potato cubes, red onion, and marinated tofu cubes on baking sheet.
- Sprinkle generously with Rendezvous famous seasoning.
- Drizzle with olive oil. Roast for 25 minutes.
- To prepare bowls, place 1/2 cup of brown rice or quinoa in each dish.
- Top with tofu, sweet potatoes, and red onion.
- Drizzle with Rendezvous sauce and garnish with green onion and extra Rendezvous seasoning.
