Ingredients:
- 2 sweet potatoes, peeled and sliced
- 1/3 cup canned corn, drained and rinsed
- 1 red bell pepper, diced
- 1/2 small red onion, diced
- 1/3 cup bacon bits
- Handful of shredded cheese
- 2 tbsp olive oil
- 2 tsp garlic powder
- 1 tbsp Rendezvous seasoning
- 2-3 tbsp Rendezvous sauce
- Salt, to taste
- Pepper, to taste
- Fresh cilantro, for serving
- Jalapeño slices, optional for serving
Instructions:
- Preheat the oven to 400 degrees.
- Add sliced sweet potatoes to a large bowl and drizzle with olive oil and season with salt, pepper, garlic powder, and Rendezvous seasoning. Toss well to combine.
- Lay the seasoned sweet potatoes on a large sheet pan and place them in the oven to bake for 15 minutes.
- After 15 minutes, remove them from the oven and flip each sweet potato slice.
- Top with diced bell pepper, diced onion, corn, and bacon. Drizzle a little olive oil on the new toppings.
- Place the sheet pan back in the oven to bake for an additional 10 minutes.
- After 10 minutes, remove from the oven and top with shredded cheese and drizzle bbq sauce.
- Place the sheet pan back in the oven to cook for a final five minutes.
- Once the cheese has melted, remove from the oven and serve with fresh jalapeños and cilantro.
