Ingredients:
- 2 chicken breasts, diced
- 1/2 cup Rendezvous sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon Rendezvous seasoning
- 1/2 onion, diced and caramelized
- Olive oil
- Corn tortillas
- Shredded lettuce
- JalapeƱo, to garnish
- Cilantro, to garnish
Instructions:
- Combine BBQ sauce, Dijon, honey, and seasoning in a dish.
- Add half of the caramelized onion and chicken.
- Toss to coat.
- Marinate in refrigerator overnight or up to 8 hours.
- Just before adding to the grill pan in a preheated grill, toss the marinated chicken in a drizzle of oil to prevent sticking.
- Grill chicken, tossing every few minutes, until golden and the internal temperature reads 165F.
- During the last few minutes, add corn tortillas to the grill to lightly char.
- Top tortillas with lettuce, chicken, remaining onion, cilantro, jalapeƱo, and an extra sprinkle of Rendezvous seasoning.
