Ingredients:
- 2 sweet potatoes, peeled and diced
- 1 lb boneless skinless chicken tenderloins, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, diced
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- 2 tbsp Rendezvous seasoning
- Rendezvous sauce, for serving
- Ranch, for serving
Instructions:

- Preheat oven to 400 degrees.
- In a skillet over medium-high heat, drizzle 1 tbsp olive oil and add the diced chicken. Immediately season the chicken with 2 tbsp rendezvous seasoning. Sear for 1-2 minutes.
- Drizzle more olive oil if needed then add the diced sweet potatoes and toss to combine.
- Add the diced onion and peppers to the skillet and toss to combine.
- Season well with salt and pepper and toss one last time.
- Place the skillet in the oven to bake for 20 minutes.
- Once the chicken is fully cooked and the veggies have softened, remove the skillet from the oven.
- Serve with a drizzle of Rendezvous sauce and ranch.
