“This is a good dish to start your meal off – because shrimp doesn’t fill you up.”
Ingredients:
- 2.5 pounds of shrimp (peeled and deveined)
- Ripe mangos
- Pico de Gallo
- Lemon/Lime/Tangerine
- Scallions
- Rendezvous Seasoning
- Lemon/Lime Seasoning
- Rendezvous Sweet Glazed Mustard
- Rendezvous BBQ Sauce
- Olive Oil
- Tortilla chips
Instructions:
- Coat the shrimp with olive oil to keep them from sticking to the pan
- Cook shrimp until they are almost done
- Pull pan off the heat (or turn heat really low depending how hot your pan stays), shrimp should continue to cook
- Add handful of mangos, dash of lemon/lime seasoning, handful of scallions, mix thoroughly
- Add a squeeze of Rendezvous Sweet Glazed Mustard and a little Rendezvous BBQ Sauce, continue to mix
- Add a tablespoon of garlic
- Squeeze ½ a lemon, ½ a lime, ½ a tangerine
- Add ½ cup of pico de gallo
- Add a generous sprinkle of Rendezvous seasoning at the end
- Once everything is incorporated and shrimp are fully cooked, plate shrimp with mangos, pico de gallo and tortilla chips
SIDE NOTE: Try a dash of Rendezvous seasoning on fresh mangos. Delicious.
