Ingredients:
- 1-1.5 lb. boneless skinless chicken thighs
- 2 sweet potatoes, diced
- salt, to taste
- 2-3 tbsp olive oil
- 2-3 tbsp Rendezvous Seasoning
- 2-3 tbsp Tigertail Rendezvous Sweet Mustard
Creamy Coleslaw:
- 2 cups coleslaw
- 1 cup primal kitchen mayo
- 2 green onions diced
- 1.5 tbsp rice vinegar
- 2 tsp paprika
- 1 tbsp honey
- salt, to taste
Instructions:
- Preheat the oven to 400 degrees.
- Prepare the potatoes. Place the diced sweet potatoes in a large bowl and cover with 2 tbsp olive oil and about 3 tbsp Rendezvous Seasoning. Toss to combine and lay them on a baking sheet.
- Lay the chicken thighs on the baking sheet and season with olive oil, salt, and pepper. Once seasoned, cover each piece of chicken with Tigertail Rendezvous Sweet Mustard.
- Place everything in the oven to bake for 20-25 minutes.
- While the meal bakes, prepare the slaw. combine 1 cup of mayo, 1.5 tbsp rice vinegar, 2 tsp paprika, 1 tbsp honey, and salt. Once the sauce is mixed together, add it to a bowl of coleslaw and toss to combine. Top with green onions and serve cold.
- After 20-25 minutes, remove the baking sheet from the oven. The internal temperature of the chicken should be 165 degrees.
