Serves 8-10
Ingredients:
- 1 tablespoon butter
- 1 small onion, diced
- 1 clove garlic, minced
- 1 bag tortilla chips
- Spray olive oil
- 1 tablespoon Rendezvous Famous seasoning, plus extra to season
- 1 1/2 cups whole milk
- 1 pound white American cheese, cut into small cubes (grab it from behind the deli counter as a block and cube it yourself!)
- 1 can diced green chiles
Instructions:
- Preheat oven to 350F.
- Melt butter in medium saucepan over medium heat.
- Add the diced onion and cook for 5 minutes until softened.
- Add the garlic and stir, for 30 seconds until fragrant.
- Transfer onion to a bowl and return saucepan to heat.
- Add milk and heat until small bubbles form on the edges of the saucepan.
- Add cheese cubes, one handful at a time, and whisk continuously until fully incorporated.
- Continue with the remainder of the cheese cubes.
- Meanwhile, spread tortilla chips evenly on a large baking sheet and spray with oil.
- Season liberally with Rendezvous seasoning.
- Bake chips for 3-5 minutes.
- Remove chips from the oven and set aside.
- Once all cheese is incorporated, remove saucepan from the heat and fold in the cooked onions and garlic, diced green chiles, and Rendezvous seasoning. Serve and enjoy!
